Chef Ena: Holiday Crazy Cookies Recipe


I had a bunch of leftover miscellaneous chocolate chips and things and was looking for ideas of how to use them up. Along comes crazy cookies! I usually make them for holidays. Basically you use different colored items depending on the holiday (for example, pastel M&M's for Easter).
The recipe below is what I use, but you can substitute as you see fit. However, I am of the opinion that the marshmallows are a required indgredient because they give a nice gooey crunch to the cookies.
You'll see that some of the cookies in the pictures here look like they have faults where the marshmallows melt and create a crater and some spillage. Once people have a taste they will find that these are their favorites!
Ingredients

- 2 ¼ cup All-Purpose Flour
- 1 Tsp. Baking Soda
- 1 Tsp. Salt
- 2 Stick of Butter-at room temperature
- ¾ cup Granulated Sugar
- ¾ cup Brown Sugar
- 1 Tsp. Vanilla Extract
- 2 Large Eggs
- ½ Peanut Butter or Nutella
- 1 cup M&M's Easter Chocolate Candy
- ½ cup White Chocolate Chips
- ½ cup Chocolate Chips
- ½ cup Chopped Fruit Flavored Yogurt Dipped Pretzel (you can find at Walmart Store)
- ½ cup Rice Krispies
- ½ cup Chopped Walnut or Almond (Your favorite Nuts)
- ½ cup Colored or White Mini Marshmallow
Preparation Instructions
- Start by heating the oven to 375 degrees.
- Mix the flour, baking soda, and salt together and set aside.
- Use an electric mixer to beat the butter, sugars, and vanilla extract together. Once this mixture is creamy and smooth, add the eggs once at a time.
- Slowly add the flour to the mixture, stopping to scrape the side of the bowl if necessary.
- Then add peanut butter M&M Easter chocolate candy, white chocolate chips, chocolate chips, chopped pretzel, rice Krispies, walnut, and marshmallow mix till all combined.
- Use a large spoon to scoop up about 2 tablespoons worth of dough (I use a number 40 scoop) or it depend size you prepare then roll into a ball and place it on ungreased baking sheet. Space out the ball of the dough leaving about 4 inches of the dough between each one. (using a silicon liner or parchment paper will make cleanup easier).
- Bake the cookies for 9-11 minutes in batches using up all of the dough.
