Chef Ena: Easy Easter Cupcakes Recipe


Yes, it's alright to use cake mixes. Not everything has to be 100% from scratch.
This recipe uses a standard store bought cake mix for the base cupcakes and then uses some easy ideas for decorating for Easter.
Ingredients

For The cupcakes:
- Betty Crocker Super Moist Cake Mix Butter Recipe Yellow or Betty Crocker Super Moist Cake Mix Yellow
- Follow instruction on the box.
- Betty Crocker Sprinkles-Red or Green Sugar
- Easter Colored Sprinkles
- Chicks Peeps Marshmallow
For the Frosting:
- 8 oz Cream Cheese Softened
- ¼ cup Butter softened
- 4 cups Powdered Sugar
- 1tbsp Cornstarch
- 2Tsp. Vanilla Extract
- 1Tbsp Milk
Preparation Instructions
Cupcakes:
- Follow the instruction on the box of the cake mix for cupcakes.
- Fill cupcake liners about half full
- Bake cupcakes per box instructions and let cool
Frosting:

Using a hand or stand mixer beat the cream cheese for 1 minute
Add butter and beat till incorporated
Add powder sugar, cornstarch, milk and vanilla extract and continue beating until creamy
Note: This frosting is ready to use immediately. If you refrigerate it, make sure let it stand at room temperature for at least 20 minutes so it spreads smoothly.
Helpful Hint: Refrigerating the cupcakes before frosting them will make it easier to spread the frosting.
Once the cupcakes are cooled down spread frosting on top then add toppings. Use our pictures for inspiration or get as creative as you want!
