Chef Ena: Filipino Beef Steak Recipe

Tender beef sirloin marinated in a blend of garlic, calamansi juice, soy sauce, and brown sugar, then fried to perfection and topped with caramelized onions. Ingredients:
- 2 1/2 lb thin thick beef sirloin steak, cut into 2-3 square pieces
- Cooking oil for frying
- Large white or brown onions, sliced into rings
- 2-3 cloves of fresh minced garlic
- 5-6 pieces calamansi (about 1/2 cup) or 1 lemon juice
- 1 cup soy sauce
- 2 tbsp brown sugar
- Salt and pepper to taste
- 1-2 cloves crushed garlic
- 3 cloves sliced garlic (optional)
- 1 tbsp butter
- Green onions for garnish
Instructions:
- Marinate the beef sirloin in minced garlic, brown sugar, calamansi juice, soy sauce, and pepper for at least 30 minutes. The longer it marinates, the better it tastes! Set aside or place it in the fridge.
- After marinating, reserve the marinade and separate the beef into another bowl. Set aside.
- Heat a pan over medium heat and lightly fry the onion rings until they are slightly cooked. Remove and set aside.
- If you want to garnish with toasted garlic, toast the sliced garlic (go ahead and use the pan you will fry the beef in) with a little bit of oil until lightly browned and set aside
- Add more oil to the pan as needed and fry the beef sirloin until it turns slightly brown. Remove any excess oil to avoid making the dish too oily.
- Pour the reserved marinade into the pan and simmer for a few more minutes until the beef becomes tender.
- Add the fried onions to the pan and mix well.
- Garnish with green onions.
- If you toasted the garlic slices sprinkle them on top
- Serve with steamed rice.
