- 6 Medium Potatoes (cooked, peeled and cut into 1/2 inch cubes)
- 5 Hard Boiled Eggs (3 finely chopped and 2 sliced for topping)
- 1 cup Mayonnaise

- 2 Fresh Celery Stalks (chopped)
- 4 Sprigs Green Onion (chopped, about 1/2 cup)
- 1-1/2 Tbsp Sweet Relish

- Salt and Pepper to taste (I recommend 1-1/2 tsp salt and 1/2 tsp pepper)
Optional Topping:
- 2 tsp Paprika to sprinkle on top - this is more for presentation than flavor
